Our Day at the Renaissance Pleasure Faire

Two weeks ago I had pleasure(no pun intended) to take the kiddos  to the Renaissance Pleasure Faire in Irvindale at Santa Fe Dam with my friend Caryn and her two little cuties. The Renaissance Pleasure Faire takes place every weekend from now until May 22nd.

We were in for quite a treat. I had never visited the Renaissance Faire before and I have to say that we had so much fun and I was surprised at how much the kids enjoyed it! My son actually cried because he didn’t want to leave. We were only there for a few hours and to be honest, it is definitely an all day event so come prepared!

My kiddos are no longer in a stroller, but I wished they were on our visit. There is just so much to see and do that Caryn and I spent a big chunk of our time trying to herd the kiddos along. I would also suggest bringing a good pair of walking shoes because you will be in for quite the walk.

 

 

We watched a magic show in the Kids Kingdom section, admired the performers and just took in all the sights. I would say that the only surprising thing for me is that the clothing is ahem… a little cheeky for the women. The kiddies didn’t notice but I did..LOL! It was still very fun and a great learning experience.

We had a great time and I can’t wait to do it again next year.  On our visit next year  I will bring better walking shoes and be prepared to spend a good chunk of my day there.

Art Takes Flight at Laguna Art Museum: Free Family Event that is a Must!

Swiss Enchilada Casserole Recipe

I think as moms/dads we are all super busy and always on the quest to save time. With crazy schedules, I have to admit that sometimes a home cooked meal is a luxury for my family. I’m on the quest to find easy and simple recipes and just had to hare this fun recipe.

My mom makes the absolute tastiest enchiladas that she calls,” Enchiladas Suizas or Swiss Enchiladas”. I’ve tweaked her recipe a bit and developed a fast and easy recipe that I can serve in under an hour.

I headed to my local Smart & Final to find my ingredients. I recently discovered  a Smart & Final not too far away from home and love their deals. I usually take a list with me because I tend to forget what I wanted since my mind is usually wondering on what I need to do next. I prepped my list and  off I went on my shopping excursion.  I love Smart & Final because of their prices and because you can also buy in bulk if you want to . It’s the best of both worlds!

I headed to the store during my lunch break and got in and out quickly! Always a plus! I was in and out in less than 30. You seriously can’t beat that!


For this recipe you will need

  • 1 dozen Guerrero Tortillas
  • 80z of swiss cheese and 8oz of Mexican Blend cheese divided
  • 2 cups cooked chicken or 1 roasted prepared chicken shredded
  • 1  28 0z can green enchilada sauce
  • 1 small container of sour cream

Preheat oven to 350°.

  1. Warm up tortillas in the microwave for about a minute.
  2. Pour about 1/2 inch enchilada sauce in the bottom of a medium baking dish, and arrange 6 tortillas in a single layer. Top with 1/2 the chicken, 1/3 cheese, 1/2 the sour cream, and 1/3 of the remaining enchilada sauce. Repeat. Coat remaining tortillas thoroughly with remaining enchilada sauce, and arrange on top of the layers. Sprinkle with remaining cheese, and top with any remaining enchilada sauce
  3. Cover, and bake 45 minutes and you are ready for dinner! Add some rice and a salad and you are all set!
