Tostadas de Aguachiles – #HispanicHertiage Month

Post sponsored by Gigasavvy. However, all opinions are my very own. I love recipes that remind me of home and are easy to make. My mother is from Sinaloa and we definitely had our share of seafood. I love introducing my children to classic recipes I grew up with and that are easy to recreate. Aguachile verdes have to be one of the easiest things to make and also one of the tastiest. It’s a dish that is very popular in the coast of Sinaloa. You have to try it, especially because it’s Hispanic Heritage Month!

Here’s what you’ll need.

 

  • 1 1/2 lbs of Jumbo Shrimp
  • 1 cucumber
  • 1 lb of limes
  • 1/4 cup of olive oil
  • 3 fresh chile serranos sliced
  • 1 teaspoon of kosher salt
  • 1 purple onion

Cut the cucumber into small slices and place at the bottom of a large mixing or serving bowl. Peel and butterfly the shrimp. Arrange the shrimp over the cucumber slices an. Mix in the salt and squeeze in  half of the limes. Add sliced onion to the mix. Cover with plastic wrap and let it sit in the refrigerator for at least two hours.

In a blender combine the rest of the lime juice, olive oil, chiles, and 1/4 cup of cold water.  Blend until smooth and add salt to taste. Just before you serve add chile mixture to the shrimp. Combine and serve over tostadas. So easy and oh so good!
